Château Haut-Bailly is one of the most respected estates in Pessac-Léognan, renowned for producing wines of elegance, depth, and remarkable balance. The vineyard sits on deep gravel soils that favour Cabernet Sauvignon, supported by Merlot and small amounts of Cabernet Franc and Petit Verdot. The 2021 vintage highlights the estate’s refined style with freshness, aromatic precision, and beautifully integrated structure, offering a classic expression of Left Bank Bordeaux.
Tasting Notes
Deep ruby in colour with bright reflections. The nose opens with aromas of blackcurrant, dark cherry, and plum, accompanied by subtle floral hints of violet. Layers of cedar, graphite, and gentle spice add complexity. On the palate, the wine is elegant and structured, with refined tannins and lively freshness. Flavours of cassis, blackberry, and soft spice unfold gradually, leading to a long and harmonious finish.
Food Pairing
A perfect partner for roast lamb, grilled beef, or duck breast. It also pairs beautifully with mushroom based dishes, truffle recipes, and aged cheeses. Decanting the wine will allow it to open and reveal its full aromatic depth and elegance.

The 2021 vintage in Pessac‑Léognan produced wines defined by freshness, precision, and classical balance. After several warm and powerful vintages, 2021 returned to a more traditional Bordeaux profile. The growing season was marked by spring frost, a cool early summer, and careful vineyard management. Warm and dry conditions in September allowed the grapes to ripen gradually, helping estates achieve good balance and aromatic clarity. For the red wines, dominated by Cabernet Sauvignon and Merlot, the vintage shows bright red and dark fruit, refined tannins, and moderate alcohol. The wines are elegant, structured, and more about finesse than concentration.
