Grape variety

This wine is made from 100% Pinot Noir made by wine legend Pascal Jolivet. The soil is rich in clay and limestone and that gives this distinctive red wine its spiciness. The grapes are picked manually and after a minimum of fifteen days, the fermentation starts for twelve to fifteen days. Ten percent of the wine is then aged in new oak barrels. The other ninety percent in stainless steel.

Tasting notes
A well-structuredPinot Noir from the Loire soils with a complex bouquet of red and dark fruits, such as cherry, raspberry, and blackberry, alongside subtle notes of spice and vanilla. On the palate, the wine is elegant and refined, with soft tannins, good acidity, and a long, smooth finish.

Food pairing
This wine is an excellent match for a range of dishes, particularly those with rich and bold flavours. It pairs well with roasted poultry, such as duck or turkey, as well as with grilled or roasted meats like lamb, beef, or pork. Its elegant structure and subtle spice notes also make it a great complement to mushroom risotto, roasted vegetables, or a charcuterie board with soft and hard cheeses.
